Easy roast chicken with vegetables

Here is a simple recipe for roast chicken with vegetables:


Ingredients:

  • 1 whole chicken (3-4 lbs)
  • 4-5 carrots, peeled and cut into large pieces
  • 1 onion, chopped
  • 2-3 potatoes, cut into chunks
  • 2-3 cloves of garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • 1 lemon, cut in half

Instructions:

  1. Preheat oven to 375°F (190°C).
  2. In a large bowl, mix together the carrots, onion, potatoes, garlic, olive oil, salt, black pepper, thyme, and paprika.
  3. Stuff the cavity of the chicken with the lemon halves and place it in the center of a large roasting pan.
  4. Arrange the vegetables around the chicken in the pan.
  5. Roast the chicken and vegetables in the preheated oven for 1 1/2 to 2 hours, or until the chicken is fully cooked and the vegetables are tender and lightly browned.
  6. Let the chicken rest for 10-15 minutes before carving.
  7. Serve the roasted chicken with the vegetables and enjoy!

Note: You can also add other vegetables such as sweet potatoes, parsnips, or Brussels sprouts to the roasting pan if you like. Just adjust the cooking time accordingly.
