Easy roast chicken with vegetables
Here is a simple recipe for roast chicken with vegetables:
Ingredients:
- 1 whole chicken (3-4 lbs)
- 4-5 carrots, peeled and cut into large pieces
- 1 onion, chopped
- 2-3 potatoes, cut into chunks
- 2-3 cloves of garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried thyme
- 1 teaspoon paprika
- 1 lemon, cut in half
Instructions:
- Preheat oven to 375°F (190°C).
- In a large bowl, mix together the carrots, onion, potatoes, garlic, olive oil, salt, black pepper, thyme, and paprika.
- Stuff the cavity of the chicken with the lemon halves and place it in the center of a large roasting pan.
- Arrange the vegetables around the chicken in the pan.
- Roast the chicken and vegetables in the preheated oven for 1 1/2 to 2 hours, or until the chicken is fully cooked and the vegetables are tender and lightly browned.
- Let the chicken rest for 10-15 minutes before carving.
- Serve the roasted chicken with the vegetables and enjoy!
Note: You can also add other vegetables such as sweet potatoes, parsnips, or Brussels sprouts to the roasting pan if you like. Just adjust the cooking time accordingly.
