Grilled chicken with roasted vegetable

Here is a simple recipe for grilled chicken with roasted vegetables:


Ingredients:

  • 4 chicken breasts, boneless and skinless
  • 2 red bell peppers, seeded and sliced into thin strips
  • 1 large zucchini, sliced into rounds
  • 1 red onion, cut into wedges
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste

Instructions:

  1. Preheat grill to medium-high heat.
  2. In a large bowl, whisk together the olive oil, balsamic vinegar, thyme, oregano, garlic powder, salt, and pepper.
  3. Add the chicken breasts to the bowl and coat them well with the marinade.
  4. In a separate bowl, toss the sliced bell peppers, zucchini, and onion with a tablespoon of olive oil and a pinch of salt and pepper.
  5. Place the marinated chicken breasts on the grill and cook for about 6-8 minutes per side, or until they are fully cooked through.
  6. While the chicken is grilling, spread the vegetables on a baking sheet and roast in the oven at 400°F (205°C) for 15-20 minutes, or until they are tender and lightly browned.
  7. Serve the grilled chicken with the roasted vegetables and enjoy!

Note: You can also use other vegetables such as eggplant, mushrooms, or cherry tomatoes in the roasting pan if you like. Just adjust the cooking time accordingly.
