Grilled chicken with roasted vegetable
Here is a simple recipe for grilled chicken with roasted vegetables:
Ingredients:
- 4 chicken breasts, boneless and skinless
- 2 red bell peppers, seeded and sliced into thin strips
- 1 large zucchini, sliced into rounds
- 1 red onion, cut into wedges
- 2 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
Instructions:
- Preheat grill to medium-high heat.
- In a large bowl, whisk together the olive oil, balsamic vinegar, thyme, oregano, garlic powder, salt, and pepper.
- Add the chicken breasts to the bowl and coat them well with the marinade.
- In a separate bowl, toss the sliced bell peppers, zucchini, and onion with a tablespoon of olive oil and a pinch of salt and pepper.
- Place the marinated chicken breasts on the grill and cook for about 6-8 minutes per side, or until they are fully cooked through.
- While the chicken is grilling, spread the vegetables on a baking sheet and roast in the oven at 400°F (205°C) for 15-20 minutes, or until they are tender and lightly browned.
