Ingredients:

  • 3 cups cooked rice, preferably leftover rice
  • 2 tablespoons vegetable oil
  • 3 cloves garlic, minced
  • 2 shallots, thinly sliced
  • 2 red chili peppers, seeded and sliced
  • 1 cup mixed seafood (such as shrimp, squid, and mussels), cleaned and chopped
  • 2 tablespoons sweet soy sauce (kecap manis)
  • 1 tablespoon soy sauce
  • 1 tablespoon fish sauce
  • 1/2 teaspoon ground white pepper
  • 1/2 cup frozen peas
  • 2 eggs, beaten
  • Salt, to taste
  • Fresh cilantro leaves, chopped, for garnish



Instructions:

  1. Heat the vegetable oil in a wok or large frying pan over medium-high heat. Add the garlic, shallots, and chili peppers, and stir-fry for 1 minute until fragrant.
  2. Add the mixed seafood and stir-fry for another 2-3 minutes until cooked through.
  3. Push the seafood to one side of the wok or pan, and add the beaten eggs to the other side. Scramble the eggs until they are cooked, and then mix them in with the seafood.
