Quinoa Salad with Roasted Vegetables

Ingredients:

  • 1 cup quinoa
  • 2 cups water
  • 1 small eggplant, cubed
  • 1 zucchini, sliced
  • 1 red bell pepper, sliced

  • 1 small red onion, sliced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Juice of 1 lemon

Instructions:

  1. Preheat your oven to 425°F (220°C).

  5. Sprinkle with toasted pine nuts if desired for added crunch and flavor.
